Prawn Salad and Mango with Yoghurt Dressing by Tamarind Village
Tamarind Village was Chiang Mai’s first boutique hotel and has been a destination for fine dining since it opened its doors to welcome guests to dine under the canopies of the tamarind tree many years ago. Known for its delicious Lanna, Thai and international cuisine, all of which feature premium grade ingredients, Chef de Partie Butsaya Wongtor was ready to face Spoon&Fork’s challenge this month. For our 4th anniversary, Chef Butsaya picked the ingredient yogurt out of a hat and was tasked with creating a new dish featuring this healthy ingredient. “We have always worked to make sure our food is healthy and homemade,” said Chef Butsaya, “so we started off by making our own yoghurt, mixing it with Thai herbs such as mint, ginger and coriander with a splash of tobacco and seasoning.
