Yellowfin tuna dish from Ratilanna Riverside Spa Resort, Chiang Mai
Japanese food has spread around the world in the last century and is hailed by some as one of the best cuisines out there. Apart from being fresh and delicious, well-made Japanese food is also beautifully presented, turning the plate into a work of gourmet art. For this distinguished dish at Ratilanna Riverside Spa Resort, their head chef has selected the red meat of tuna to be the star of the dish. The nori wrapped pan seared yellow fin tuna with asparagus, avocado salsa and wasabi mayo brings together the tastes of Japan perfectly, in a modern and exciting way. For anyone looking for some great Japanese flavours, this is a dish not to miss. Ingredients Nori / red meat tuna / blanched asparagus / carrot / zucchini / grilled shitake / mushroom / avocado / diced shallot / diced coriander / diced tomato / olive oil / lime juice / salt and pepper / wasabi / mayonnaise / honey / Japanese soy sauce / mirin / white and black sesame seeds / Thai basil (for decoration) Method 1. Mix the avocado, shallot, coriander and tomato then season with olive oil, lime juice, salt, and pepper to make an avocado salsa. Chill in the fridge. 2. Mix wasabi and mayonnaise together then season with lime juice and honey. 3. Cut the tuna into a 1×1 inch-wide strip. 4. Marinate the tuna in Japanese soy sauce and mirin. Once marinated well, wrap the fish with nori then sear it for 30 seconds on each side using a lightly oil coated pan. 5. Slice zucchini and carrot, and cut the shitake mushroom’s stalk out. Wash the prepared vegetables and coat with olive oil, salt, and pepper. Grill in the pan until cooked through. 6. Cut the seared tuna into two pieces, and put the avocado salsa in a circle shape mold on the plate. Sprinkle some toasted sesame on the wasabi mayo. Place the tuna on top of the avocado and dress with grilled vegetable, blanched asparagus, wasabi mayo, and Thai basil.
