Chiang Mai Marriott Hotel recently hosted an exclusive gastronomic experience, bringing together Chef Supoj “Gib” Suwanwong and Chef Tony Zheng Wei for a night of culinary innovation and authentic flavors.
The evening began at The Plaii Eatery Café & Bar, located at the crossroads of Chiang Mai’s famous Night Bazaar. This stylish café, which transforms from a vibrant social hub by day into an elevated wine and cocktail bar by night, set the stage for Chef Gib’s innovative bar bites. Highlights included Wagyu Beef Black Truffle, featuring truffle espuma and pickled shallots, Hottate Chae Nam Pla, a refreshing Hokkaido scallop sashimi with a Thai-inspired chili dressing, and Calabrese Pizza, crafted with spicy Nduja sausage and olives. The lively atmosphere was enhanced by a live DJ set in the garden, paired with creative cocktails such as Golden Grove Brew, a unique beer cocktail with Chang Unpasteurized, and the refreshing Lemonade Spritz with Luxardo Limoncello.
The culinary journey continued at HAN The Chinese Cuisine, where Chef Tony unveiled his exquisite new menu. HAN, known for blending Cantonese, Sichuan, and Beijing flavors with local ingredients and time-honored techniques, offered a unique Chinese dining experience. Guests indulged in Chef Tony’s signature Wok-Fried Prawns with Lychee Sauce, along with handmade dim sum, including Chinese Prawn & Chive Dumplings and traditional Har Gow, prepared fresh daily. A highlight of the evening was the Peking Duck Hong Kong Style, expertly carved tableside by Chef Tony himself. Other standout dishes included Sichuan Kung Pao Chicken, Mapo Tofu with Minced Pork— a dish Chef Tony has refined over a decade—and Wok-Fried Beef with Black Pepper. The experience concluded on a sweet note with Salted Egg Yolk Lava Buns, a perfect balance of richness and indulgence.
