New Exclusive October Menu at Favola

Local media were invited to lunch at Le Meridien Hotel to sample the new exclusive menu for October at Favola. 1st Course: Grilled white Asparagus, Poached free-range egg, chives béarnaise sauce, fresh winter truffle slices. 2nd Course:Pan-fried tiger prawns in AOP sauce, garlic, extra virgin olive oil, parmesan gel, black garlic chips, and micro cress. 3rd Course:Risotto with braised bone marrow, Carnaroli rice, fresh sliced of Italian black truffle, Spumante Wine, Parmesan cheese salted butter, Bread Crust Crumble. 4th Course Grilled crusted swordfish with raisins, pine nuts, bread crumbs, and orange fillets served with red vinegar onions, garlic confit, and sour peppermint sauce. 5th Course Pina Colada mousse served with mango, coconut, and chocolate soil.

Favola restaurant reopens its doors to Chiang Mai locals and travelers with seasonal culinary delights. Led by Chef Luca, our Chef de Cuisine, Favola is prepared to elevate your dining experience to new heights with a trio of seasonal set menus. For the Sicilian seafood experience in October, the culinary journey begins with a mouthwatering dish: Tiger Prawns stir-fried in AOP sauce and parmesan cheese. Chef Luca combines the local ingredients, tiger prawns, with Sicilian cooking techniques. Followed by a Sicilian-style Halibut Fish Soup, prepared using three essential ingredients: capers, cherry tomatoes, and black olives, which are renowned in the Sicilian region for their use in soups. For pasta, savor the Chitarra Red Snapper, featuring homemade spaghetti and tableside grated Bottarga (salted sun-dried fish roe).
Moving on to the main course, we offer Grilled Crusted Swordfish, marinated with local spices from Ragusa, the chef’s hometown: raisins, pine nuts, bread crumbs, and orange fillets, accompanied by red vinegar onions, garlic confit, and sour peppermint sauce. For dessert, indulge in treats like Pina Colada Mousse, served with fresh mango, coconut flesh, and chocolate.

The seasonal menus are available in both à la carte and set menu options.
Favola Restaurant is available daily for lunch and dinner from 11:00 – 23:00 hrs. on the 2nd floor of Le Meridien Chiang Mai.
