For over forty years Hillkoff has been one of the largest, and most comprehensive, suppliers of coffee and coffee-related products in Thailand.
Having worked with highlanders for a few decades before the start of the coffee business, Hillkoff has had a strong relationship with Northern Thailand’s farmers over the years, which has only been strengthened with each generation. Purchasing only highland-grown Arabica coffee from Northern Thailand’s farmers, Hilkoff has also invested in years of research and development in order to find ways to maximise not just coffee, but coffee farming waste, into a multitude of products.
Bananas are commonly grown alongside coffee plants and offer an extra means of income for many farmers. With that in mind, Hillkoff has been developing products which are banana-based such as dried bananas, which feature Hillkoff’s own extra jumbo banana trees, growing up to five metres tall. With each bunch of low-in-sugar bananas weighing a hefty two kilograms, Hillkoff’s dried bananas have now been certified to be longer lasting than normal. Using the solar dryer innovation, these bananas are now dipped in espresso, cappuccino or green tea powder, elevating the plain dried bananas into a health product of the future.
Similar to coffee, bananas have different grades of different qualities, leading to vast potential. One product which has been developed is the banana flour. From one banana, two types of flour can be extracted – one suitable for making drinks and another flour. Many of Chiang Mai’s chefs and bakers have been experimenting with this flour, resulting in delicious, high quality, low cholesterol natural goods from croissants to brownies.
Drinks such as chocolate coffee, green matcha, Hokkaido milk and corn milk have also been developed as products using banana flour with many cafes around town now using the flour as a substitute for sugar.
Healthy, tasty and inexpensive, banana flour is good for the environment, the body, the pocket as well as Thailand’s highland farmers.
