Food for You’s Chef Tutu is no traditionalist. He has always blazed a trail here in Chiang Mai for culinary innovation, winning a nod for one of Thailand’s Best Restaurants by Thailand Tatler as early as 2004.
This month he wowed our palates again with three delightful dishes. Firstly, upon finding some succulent bites of fresh crab meat recently he returned to his kitchen to find a bowl of mangosteen, and promptly mixed them together, adding a tart sauce to the sweetness of the crab and fruit meats. The next dish was the crispy Peking duck which he grills then fries to a crunchy crispness. When wrapped into a traditional Peking duck roll, he added a sauce of sweet black soy and mustard to make a perfect bite. Lastly we tried the tiger prawns fried with chili and salt. Massive and importantly, fresh, tiger prawns were roasted with salt and dried chili and served straight off the wok.
