The award-winning Favola Restaurant at Chiang Mai Marriott hotel is upping its game as the summer heat rises, with some splendid new specials being offered on every last Sunday of each month—don’t miss the next event on the 27th April!
Last month, the Favola journey began with a journey through Sicily, with Chef Luca serving up the island’s most beloved and iconic dishes. There was a carving station, a seafood buffet on ice, plenty of a la minute made-to-order dishes as well as a delightful selection of desserts, all featuring and highlighting Sicilian cuisine.
This next event, on the 27th April, will feature the lesser known, but by no means lesser, cuisine the Apulia region. of If you are unfamiliar, this region covers the heel of the Italian ‘boot’, a quieter, hotter, dryer and very coastal corner of Italy where whitewashed hamlets, sun kissed towns and baroque cities are either surrounded by arid farmlands, or sit next to the sparkling sea. This coastal region, which abuts not just the Adriatic Sea to the east, but the Ionian Sea to the Southeast, lends itself to some unique dishes—all focused on the availability of the raw ingredients.
Being all about raw materials—by land and sea, Apulia cuisine is the home of the ear-shaped orecchiette pasta, the stracciatella-stuffed burrata cheese, the hearty crispy panzerotti and delicious comfort dish fave e cicoria, or fava bean purée with wild chicory.
Lesser known here in Chiang Mai than other more easily found Italian cuisines, this is an opportunity for lovers of all things Italian to try out something outside the norm, a lesser known but very familiar cuisine featuring some of the most beloved dishes in Italy.
