Italian cuisine is as unique to each region as this nation’s rich tapestry of culture and history. Chef Luca has scoured Chiang Mai’s producers to find ingredients to turn into some of the most delicious dishes beloved by Italians. Authenticity is important, but as any real Italian chef knows, so is creativity, and Chef Luca has created a new menu which encompasses and fuses the best of both traditions.

Here are some musings to whet your appetite;

Bruschetta
This simple antipasti needs no introduction. A simple piece of bread is grilled before toppings are added and flavours completed by a generous drizzle of fine olive oil. Done properly, and with the right ingredients, this is a superb bite to start off any meal. Here at Favola, a number of toppings are available – perfect for our Thai sharing culture – including smoked salmon and capers, figs, Parma ham and honey or spicy salami. The dish is elevated by the quality tomatoes, fresh basil, garlic confit and of course the best Italian bread

Pizza Focaccia
Sicilian style thin thin pizza is freshly baked in the restaurant oven and topped with an assortment of delicious goodies which are beloved by pizza lovers world wide – ham, cheese, rocket and=salad, tomatoes dripping in olive oil, oregano and more…

Chestnut Cream Soup
A traditional Sicilian soup rich, creamy and aromatic with little pops of salty guanciale (pork cheek) bacon for added pop

Pasta
Ahhh….pasta! Done properly, few dishes in the world can beat the satisfaction of a good pasta. With over 300 pastas believed to be traditional to Italy, Chef Luca creates multiple fresh pastas to serve up with an assortment of sauces and raw ingredients, many featuring local recipes faithful to their origins and roots.

Homemade Ravioli
Freshly made ravioli filled with roasted chestnuts, Italian sausages, ricotta and Parmesan cheese in an aromatic sage and raisin sauce.

Spaghetti Clams
Spaghetti vongole, or clams, is another classic Italian dish rich in the aromas of white wine, cherry tomatoes and bottarga fish roe.

Orecchiette Pasta
Named ‘little ear’, this pasta is hand made and cute as a button, with its rounded shape and plump edges, perfect as a container to scoop up all the delicious Italian sausage, sage, white wine and 36 month aged Parmesan cheese.

Main Course
No Italian feast is complete without a secondi course, and Chef Luca has multiple options for you from rack of lamb to rib eye steaks, all served with potatoes fried with bacon and onion, asparagus and options of numerous sauces.

Dessert
If you can manage, then make food for lemon custard and mascarpone served on thin pizza dough, a favourite of Sicily which is unique here in Chiang Mai.

Chocolate Mousse
Light as air and tasty and rich in flavour, this gluten free chocolate moose is served with vanilla sauce and almond crumble.

Pistachio Mousse
The distinct flavours of pistachio and chocolate are serve with orange jelly with the added texture of the crunchy pistachios.
