A Thai chef was deeply inspired by Scandinavian cuisine, following recent travels, resulting in yet another unique new eatery here in Chiang Mai!
Chef Nan, of Cuisine de Garden fame and success has joined forces with Kraisit Foosuwan, owner of iconic Chiang Mai brand, Wawee Coffee, to open this delightful little café and restaurant right by the river.
The concept of FOO Coffee Roaster X Loaf & Fish is to honour Thai seafood, but while drawing upon Scandinavian techniques, mood and aesthetics.
“When I was travelling around Scandinavian countries I noticed that they really had different ways to feature their fish and seafood into their cuisine, using drying, pickling and other curing techniques, the seafood is the hero of many of their dishes,” explained Chef Nan. “I wanted to use our own Thai fish, but with Nordic techniques. Natural yeast is also hugely important and I am incorporating that into our freshly baked products.”
Chef Nan recommends the restaurants fish and chips, its fish schnitzel, its fiskutery and sourdough served with Tobiko cream cheese as well as its open sandwiches filled and topped with all sorts of local fishy delights. The portions aren’t huge, but every bite that we tried was delicious.
As to the coffee; it’s Wawee…need we say more? Wawee Coffee was one of the first brands of northern Thai coffee to have reached national recognition and with a focus on sustainable coffee farming and harvesting, this entire project makes sure it works with communities, all along the supply chain to honour the hard work and dedication of our Thai producers and farmers.
They are open for breakfast too with a special promotion set of eggs on toast and coffee for a super friendly 95 baht.
