Chef Phubase of Aquila has never been one for boxes, preferring to do his thinking upside of them. While he is better known for his command of the Thai-style Italian cuisine – the bigger the flavour the bolder he will go – he is about to launch a borderless menu where his imagination is his only restriction. Calling his new cuisine, Italian with an Asian twist, each dish will be served tapas-sized but great in details.
The menu will change regularly, so you won’t ever get bored, but for the foreseeable future, here are a few dishes to get your stomach grumbling…
Oyster and Beef
Thinly sliced Wagyu served with batter fried Thai oysters served with ponzu, white truffle, white sesame sauce, lemon and topped with shaved truffle.

Hard to describe, this fettuccine is likely unlike any you have ever tried before. Freshly made pasta is served cold and each bite bursts with spice, sweetness, savoury and a hint of acid.

Foie Gras Caramel Popcorn
Grilled food gras served on brioche slathered in caramel is served with pop corn, fresh figs and rocket salad.
Seared Hokkaido Scallop
Grilled and immediately served, the large sweet and succulent scollops release aromas of Thai basil oil and is served with potato foam and crispy Parma ham for balance.
